Among the news was the claim by campaigners that insect-based snacks could be the "food of the future". Advocates argue insects like crickets and ants are rich in protein and micronutrients, making them a viable component of a balanced, nutritious diet. Attendees at a conference at Nottingham University today will hear about the sustainability and health benefits of these critters. Before sampling the crickets, Richard compared them to prawns. "My thinking on this is that if we didn't eat prawns as a dish and suddenly someone said try eating prawns, most people would go, 'Why would you want to eat that?'" The host didn't hesitate to pop the cricket into his mouth, describing its unexpectedly agreeable flavour. "The flavour is quite light, they're sort of hollow," he told viewers. "I'd say it tastes a little bit like a very mildly flavoured nut." Richard assured there was "nothing revolting" about the snack, adding: "There's no back taste, nothing that makes you want to heave, in fact, I'd like a bit of salt on that," reports the Express.
