The Ribs – Gaucho opened as a restaurant on Millennium Walkway in Dublin in December 2024, and launched its takeaway and delivery service at the end of January. The menu includes combo platters for one to four people alongside sandwiches, skewered meats and finger food. The concept was born when a group of friends moved to Ireland and missed the communal food culture of southern Brazil. For a gaucho, barbecue is less about eating meat than the atmosphere – friends, family and the kind of noisy table that lingers long after the plates are cleared. That is the ethos they hope to inspire through their restaurant and their food. The most popular order is the Talagaço – a two-person platter of grills, sides and sauce. Sandwiches are also popular: picanha strips with melted cheese, ribs-on-the-bone and pulled beef rib. Meat is sourced locally, with one exception – cupim, a cut from Brazilian cattle that doesn’t exist in Ireland and is imported specifically for the menu. Tchê (for 3-4 people): 16oz picanha, 8oz flank steak, four sausages, four chicken pieces, vinaigrette salsa, rice, farofa, potato salad and sauce. How was the service? Ordering online was straightforward. The food arrived hot in a paper bag. Everything was intact, although the paper was badly torn by the sharp-edged plastic containers. Was the food nice? The picanha and flank steak had good flavour and were cooked rare, as ordered. They could have done with a touch more char on the exterior. The flank steak was the better of the two. The chicken – not free-range – had a satisfying grilled flavour. The sausages, glazed on the outside, had a firm bite and well-balanced spice. They were the standout from the grill. The sides were generous. The potato salad, made with carrots and scallions, featured firm chunks of potato – not mushy, and thankfully not drowned in mayo. The rice was well cooked. Condiments included a red onion and tomato salsa, a barbecue sauce and farofa – toasted cassava flour for sprinkling. What about the packaging? The food containers are all single-use black plastic, which had sliced through the paper bag during delivery – not ideal. What did it cost? €49.90 for dinner for four people: Tchê, €49.90. Where does it deliver? Available Monday, noon-5pm; and Tuesday-Sunday, noon-10pm through Deliveroo, Just Eat and Uber Eats within a 5km radius; or collection. Would I order it again? Perhaps. The steak doesn’t benefit from travelling, but they do a nice mix of grills and sides.
